Le 27 mars 2013, il a lancé un projet ambitieux : le Ristorante Piazza Palmieri, situé en plein cœur du centre historique de Monopoli. C’est ici que Stefano Dalessio exprime pleinement sa philosophie culinaire, fondée sur un équilibre harmonieux entre tradition et créativité, et associée à une sélection rigoureuse des matières premières. Chaque plat est créé dans le but de surprendre et de ravir, dans une ambiance élégante et chaleureuse, où la passion pour la gastronomie se mêle à un profond amour pour le terroir. --- Born in Monopoli (Bari) in 1982, Stefano Dalessio took his first steps in the culinary world by graduating from the I.P.S.S.A.R. in Castellana Grotte (Bari). From a very young age, he combined his studies with intense practical experience, working in a renowned restaurant nestled in the Monopoli countryside. His career continued at the Hotel Royal Inn in San Mauro Mare (Bari), where he served as Executive Chef, before joining the prestigious Sheraton – Nicolaus Hotels chain in Bari in 2004. There, he further expanded his skills, distinguishing himself and earning numerous certificates of merit. In 2006, he returned to his beloved Monopoli and dedicated himself passionately to managing a restaurant specializing in seafood and meat cuisine. From 2008 to 2012, he became co-manager, thus consolidating his entrepreneurial vocation. On March 27, 2013, he launched an ambitious new project: Ristorante Piazza Palmieri, located in the heart of Monopoli's historic center. It is here that Stefano Dalessio fully expresses his culinary philosophy, founded on a harmonious balance between tradition and creativity, combined with a meticulous selection of raw ingredients. Each dish is created with the intention of surprising and satisfying, in an elegant and welcoming atmosphere, where a passion for gastronomy intertwines with a profound love for the region
